I love tiramisu, its rich, creamy and full of calories and rum so really there's not much to dislike! However I am perpetually on a diet at the moment and so I needed to find a low fat verison of this tasty desert.
I love this tiramisu recipe as not only is it low fat but it's also a lot lighter than the rich marscapone based ones which means that you will definitely have room for it after you dinner!
I have also named it my lazy low fat tiramisu as it's just so easy to make. It takes about 5-10 minutes to make and then goes into the fridge to await eating. It's great to make in advance as the longer the flavours take to combine and sink in the better!
You can make it in a pudding tray or you can do individual portions and serve them in pretty cocktail glasses.
1 box of sponge fingers
1/2 pint strong black coffee
A good slosh of rum (optional)
300g fat free fromage frais
200g low fat cream cheese
60g icing sugar
1st vanilla essence
Cocoa power to sprinkle.
Place the sponge fingers in a bowl and pour over the coffee and rum mixture until the fingers have absorbed most of the liquid.
Meanwhile mix the fromage frais, cream cheese, icing sugar and vanilla essence together (taste first and add more icing sugar if you prefer the mixture slightly sweeter.
Then layer half of the sponge fingers at the bottom of your dish and cover with the half of the fromage frais mixture.
Layer the rest of the fingers and cover with the remaining fromage frais mixture.
Sprinkle the cocoa over the top and place in the fridge to chill for around 2 hours.
Eat and Enjoy!
